POTSTICKERS

Ingredients:

1 lb. ground beef

4 or 5 scallions, sliced thinly

2 or 3 slices of jarred pimentos, sliced thinly

1 tsp. yellow mustard

1/4 tsp. coarse salt

1/4 tsp. black pepper

1 TBSP.  chopped, fresh parsley

1 pkg.  (20 or 30 ) wonton wrappers

Put all ingredients into a large bowl.  Mix everything together with a wooden spoon ( or any utensil that you like best;  even your hands! ).   Lay out about 6 – 8 wonton wrappers at a time.  Moisten edges with water.  Place approximately 1/2 tsp. meat filling in center,  fold up wrappers and seal tightly.   Heat 2 or 3 tablespoons vegetable oil in wok or frying pan.  Add potstickers and brown the bottoms on medium/low heat.  You may have to do this step in stages, depending on the size of your pan.  When they are all browned, add about 1/2 cup beef stock or water and cover your pan to steam the potstickers.  Reduce the heat to low.  Steam for about 10 minutes.

FOR THE DIPPING SAUCE:

This was a total experiment:   1/4 cup soy sauce,  1/2 cup brown sugar, 1/2 tsp. rice vinegar,  1/4 cup maple syrup.   This did not taste anywhere near authentic,  but it wasn’t bad.  Just different.  Which is sometimes a good thing!!    Anyway,  we all really liked this dish.
