LINCOLN LOGS

This is another recipe I came up with just to honor our new President and his respect for Abraham Lincoln.

And plus, I needed a way to use up the filling leftovers from the rice balls I made!   But, mostly, for Barack Obama.

Ingredients:

1 box phillo dough

about 4 plum tomatoes, diced

grated cheese, to taste

broccoli ~ cauliflower mixture, for filling

canola oil, for brushing
Method:

First, mix together the tomatoes, grated cheese, and broccoli mixture together. (for the broccoli-cauliflower, I had just sauteed them together with a couple cloves of garlic until they were cooked and then pureed them together )

Put about 4 – 6 sheets of phillo dough together by brushing each separate sheet with a little canola oil. Cut the sheets into about 4 inch squares. Center about 1/2 – 1 teaspoon filling on each square. Fold up a little of one side, fold in 2 edges and then the last side gets folded over.

Bake in oven at 350 degrees for about 10 – 15 minutes until browned.

Pile them up like Lincoln Logs!!
